The inspiration behind this project are the new trends in the culinary world in Scandinavia which I find very interesting. A number of chefs over there started to apply techniques from all over the world, on local base products. For example miso of local cereals and for example drying of food in sand. In order to make this kind of techniques accessible for hobby chefs, I made a three-piece food storage set. From accessible smoking and drying in sand to the self-fermenting miso and kimchie.
Smoke
The Smoker is made entirely of cedar and glass. The combustion chamber is pre-burned and will not continue to burn, but delivers a unique taste.
Drying
The Drying-bowl is a composite of the rotary dust and debris from cedar. In the drying-bowl almost all root and beet vegetables can be dried.
Miso
The Miso pot is also made of cedar, the use of the ropes to exert pressure on the mass in the pot are ideal for miso and kimchie.
