During the last year I realised that food culture in the Netherlands is not really growing any more, it has actually shrank a lot over the last 30 years. During the golden age the Dutch people had a lot more diversity in local Dutch made food products and eventually this is slowly coming back. But a local pea soup still tastes like pea soup. To really make local food interesting we have to be more creative with our cooking techniques and try to experiment with principles from all over the world.
The Sooijs 305 Cooking system is my answer to chefs and semi-professional amateur cooks. The Sooijs 305 system is a completely open structure, with endless possibilities of combining culinary techniques from all over the world. The user can combine almost all types of food fermentation, preservation and preparation. This all within one open system that is based around simple elements like the solid cast iron pan and stainless-steel isolated rings. All the external tools are not made to do one thing only but can be used in various ways.
